You are probably pressing the right mouse button (if you have a mouse), or tapping with two fingers instead of one (if you have a trackpad). Both of these trigger undo.

Be careful to click directly on a card. If you click on the background, it will initiate the automatic play feature, which makes it seem that "cards are flying around." This is one of the ways that people get fast times.
